Foo Fighters are one of those legendary bands we’ve always wanted to see live but somehow never managed to catch. They barely ever come to France, so you bet we’re thrilled to have snagged tickets for their Hellfest Festival show in June!

Since we’ve been listening to a lot of these bands’ tunes lately, we kinda got a craving for more. So, we dashed to our rock ‘n’ roll kitchen and whipped up the ultimate treat: a Foo Fighters Oreo and Cream Cheesecake. And because we’re just that adorable, we’re sharing the recipe with all of you! Grab your spoons, folks—it’s go time!

Why do the Foo Fighters deserve some cake?

Glad you asked! Here are five reasons why Foo Fighters are awesome :

  • And last but not least, with Dave Grohl—Nirvana’s legendary drummer turned frontman—you get charisma, talent, and pure rock ‘n’ roll energy all packed in the same man (only Jack Black can keep up, we tell you). Dave Grohl is super fun, Dave Grohl is super nice. Dave Grohl is simply the best. That’s right: we will never get tired of this guy!

Let’s bake a Cheesecake for Dave Grohl and his band

Since our favorite Foo Fighters song is “The Pretender,” we decided to inspire our treat with the colors from its music video: black, white, and red. In the pastry world, that could mean a lot of things, but to our demented minds, it immediately screamed Oreos, cream, and strawberries.

We wanted a cake as fresh and generous as Dave Grohl, so we went with the ultimate American treat: cheesecake. To make it extra easy to make, we decided to make a no-bake recipe.

Foo Fighters Oreo & Strawberry Cheesecake

Ingrédients

  • For the crust
  • 60g Butter

  • 150g Oreos (only the biscuits, keep the cream aside)

  • For the filling
  • 300g Mascarpone

  • 300g Cream Cheese (Philadelphia, for example)

  • 200g Cold Heavy Cream

  • 70g brown sugar

  • 70g sugar

  • The Cream scrapped from the oreos

  • Oreo’s crumbs

  • 250g Strawberries

  • 2 tsp Vanilla extract

  • 1 tsp lemon juice

  • A pinch of salt

Instructions

  • First of all, place a bowl into your fridge and make sure the heavy cream is cold.
  • The crust
  • Place the Oreos in a freezer bag and, with a rolling pin, smash them to pieces. Feels good right?
  • Place the Oreos in a bowl, melt the butter, and pour it on the crumbs.
  • Place the mixture in a pan and, with a spoon, spread it and press it firmly until even.
  • Let the crust set in the fridge. Meanwhile, prepare the filling.
  • The filling
  • Add the mascarpone, cream cheese, sugars, vanilla, salt, and lemon in a bowl, and with a whip, mix until smooth.
  • In a separate bowl, whip the heavy cream until soft peak form. Add gently to the rest of the filling.
  • Add Oreo crumbs and mix gently.
  • Get the crust out of the fridge, pour half of the filling then add strawberries (you can slice them in two or four if you like smaller bits. Pour the rest of the filling. Then place into the fridge to set for at least 6 hours (a whole night is better).
  • Yeaaaaah! Your cheesecake is done! You can decorate it to your liking.

Notes

  • For a firmer texture, you can add 2 gelatin sheets to the filling: hydrate the sheets in a bowl of water, squeeze them, then add to a bit of heavy cream. Put the mixture in a microwave for a few seconds before adding the melted sheets to the mascarpone.
